Miyabi Knives
Miyabi is the Japanese knife brand of Zwilling J.A. Henckels, German-owned but genuinely made in Seki, Japan's historic centre of samurai-sword making. The brand brings together traditional Japanese blade craft and modern steel technology, and is known for exceptional out-of-the-box sharpness and a beautiful finish. It takes more than 100 steps and 42 days to make a single Miyabi knife, each one hand-finished by skilled artisans, which is a large part of why these knives are held in such high regard.
Much of that reputation comes down to the Honbazuke edge, a traditional three-step honing method in which each blade is sharpened and stropped by hand to a scalpel-like finish.
