Kai Shun Premier Knives
The Shun Premier Tim Mälzer collection builds on the foundations of the Shun Classic series, introducing a more expressive and tactile design while retaining the same high-performance materials. Handmade in Japan, this premium range was developed in collaboration with Tim Mälzer, with a focus on meeting the demands of professional kitchen environments.
At its core, each blade features VG-MAX steel clad in 32 layers of Damascus on each side, hardened to approximately 61 HRC for excellent sharpness and long-term edge retention. What sets the Premier series apart is its distinctive three-stage blade finish. The upper section is hand-hammered using the traditional Tsuchime technique, reducing friction during cutting, followed by a fine matt Damascus grain, and finished with a highly polished precision edge. Paired with a warm-toned pakkawood handle, the result is a knife that combines performance with a more textured, considered aesthetic.

Our Personal Opinion
Handling the Shun Premier knives, the texture of the blade is one of the first things you notice. The hammered finish gives the knife a slightly different presence compared to smoother Damascus blades, both visually and in hand. It feels more tactile, with a subtle sense of depth across the blade surface.
The pakkawood handle adds warmth to the overall look and provides a stable, comfortable grip during extended use.
On the board, the knife feels composed and responsive. The blade moves cleanly through ingredients, and the hammered finish can be noticed during slicing, where it helps reduce sticking slightly. The cutting action remains precise and controlled, supporting both detailed work and general prep. As a collection, Shun Premier feels well balanced between performance and design, offering a more textured alternative to Classic while maintaining the same underlying precision.
