KOTAI Densho VG-10 Damascus Knives

The KOTAI Densho VG-10 Damascus knife collection is built around the idea of combining Japanese precision with Western robustness. Made in Seki, Japan, the series uses a VG-10 stainless steel core surrounded by 67 layers of Damascus steel, giving the knives a sharp, durable cutting edge with a distinctive layered finish.

VG-10 is valued for its high carbon content, which helps the blade take a very fine edge and retain sharpness for longer than many standard kitchen steels. The addition of chromium, molybdenum, vanadium, and cobalt also supports corrosion resistance, durability, and ease of maintenance, making the blade practical for regular use as well as precise cutting. Finished with a hammered Tsuchime pattern, the blade creates tiny pockets of air between the steel and the food being cut, helping reduce drag and food sticking during prep.

Our Personal Opinion

Handling the KOTAI Densho knives, the first thing that comes across is the balance between sharpness and familiarity. The blade feels clearly Japanese in its cutting response, but the overall handling has a little more of the sturdiness many people associate with Western kitchen knives. It does not feel overly delicate, which makes it approachable if you want Japanese performance without something that feels too fragile.

The hammered Tsuchime finish is more than just a visual detail. In person, it gives the blade texture and depth, but on the board it also helps with food release, especially when working through ingredients that tend to cling to smoother blades. The Damascus pattern sits underneath this finish nicely, giving the blade character without making it feel overly ornate.
