KOTAI Bunka Damascus Knives

The KOTAI Bunka Damascus knife collection combines the distinctive precision of the Bunka profile with a more refined Damascus blade construction. “Bunka” means “culture” in Japanese, reflecting the knife’s traditional use in preparing a wide variety of Japanese home cooking. Recognisable by its reverse Tanto profile, also known as a K-tip, the Bunka offers a more precise point than a classic rounded blade, making it well suited to controlled cutting, trimming and detailed board work.

Each blade is forged from Japanese AUS-10 high-carbon stainless steel and wrapped in 66 layers of steel to create the Damascus pattern. AUS-10 combines strong carbon content for hardness and edge longevity with chromium to support corrosion resistance and easier maintenance. Hardened to approximately 61 HRC, the Bunka Damascus range is designed to deliver sharp, precise cutting performance while remaining practical for regular kitchen use. Finished with a Tsuchime hammered blade, hidden full tang construction and an octagonal ebony handle, the collection balances Japanese-style precision with premium materials and everyday control.

Our Personal Opinion

Handling the KOTAI Bunka Damascus knives, the K-tip immediately gives the range a more precise and purposeful feel. In person, the Damascus pattern and Tsuchime finish work well together. The layered steel gives the blade depth, while the hammered surface adds texture and a more hand-worked look. It is more visually detailed than the standard 440C Bunka, but it still feels practical rather than overly decorative. On the board, the hammered finish helps with food release, especially when working through ingredients that tend to cling to smoother blades.

The ebony handle gives the knife a noticeably premium feel in hand. Its octagonal shape helps guide grip placement, and the hidden full tang gives the knife a stable, balanced feel during use. The AUS-10 steel feels crisp and confident through the cut, with the edge responding cleanly to controlled slicing, chopping and detail work. As a collection, KOTAI Bunka Damascus feels like a refined upgrade on the standard Bunka, offering more visual depth, stronger steel specification and the same useful, precise K-tip profile.
