Tamahagane Knives
Tamahagane takes its name from the pure, high-grade steel that Japanese swordsmiths once reserved for the very best katana, and the brand builds on that heritage with modern steel technology. Made at the Kataoka factory in Niigata, Japan, Tamahagane knives are known for keen edges, long edge retention and, unusually for such hard blades, being genuinely easy to re-sharpen.
That last point comes down to how they are built. Each blade uses a three-layer construction, a hard cutting core clad in two softer, more stain-resistant outer layers, which gives you the keen edge of hard steel with the resilience and easy maintenance of softer cladding.
