Kasumi HM Knives
The Kasumi HM knife collection is produced by the Sumikama Cutlery factory in Seki, Japan, combining traditional Japanese knife-making with modern materials and manufacturing techniques. The series is built around a 3-ply blade construction, with a VG-10 steel core sandwiched between two outer layers of corrosion-resistant stainless steel. This gives the knives a strong, sharp cutting edge while maintaining durability and everyday practicality.
The defining feature of the HM series is its hammered blade finish, created under heavy pressure to strengthen the steel and give the surface its distinctive textured appearance. The hammer pattern appears on both sides of the blade and helps reduce food sticking during use, while the polished finish gives the range a cleaner, more refined look. Hardened to approximately 60 HRC and finished with smooth POM resin handles, Kasumi HM knives are designed to offer sharpness, comfort, and reliable performance in a practical Japanese-made format.

Our Personal Opinion
Handling the Kasumi HM knives, the hammered blade finish is the first detail that catches the eye. The pattern gives the blade a more tactile, work-focused character than a plain stainless finish, but it still feels clean and refined rather than overly decorative. In person, the hammered surface has more definition than photographs often show, especially where the polished steel catches the light.
The knives feel light, precise, and comfortable in hand. The POM handle gives the range a practical, easy-care feel, with a smooth surface that sits naturally in the hand during regular prep. It does not have the warmth of a wooden handle, but it suits the purpose of the range well, keeping the knife hygienic, balanced, and straightforward to maintain.
