Deba Knives
The deba is Japan's traditional fish knife, and one of the most distinctive blades in the whole Japanese kitchen. Where a Western fillet knife is thin and flexible, the deba is the opposite: thick, heavy and rigid, built to break down a whole fish from start to finish. Its weight lets it cut cleanly through a fish head and collar, its thick spine gives the stability to work around the frame without flexing, and the finer part of the edge toward the tip lifts clean fillets off the bone. It is, in effect, a fish cleaver, butcher's knife and fillet knife rolled into one specialised tool. For anyone who buys and prepares whole fish, nothing does the job quite like it. The defining feature of a traditional deba is its single-bevel edge, ground on one side only rather than on both like a Western knife. This single bevel lets the blade track precisely along the bones and frame of a fish, separating flesh with very little waste, which matters most when the fish is expensive. Because the edge is ground on one side, traditional single-bevel deba are made for either right or left handed use, so it is important to choose the correct version for your dominant hand. A deba is sized to the fish you work with: smaller blades around 10 to 15 cm suit smaller fish and tighter work, while 16.5 to 21 cm blades handle larger fish and give more chopping power through the head and collar.
