The Miyabi 4500FCD, also known as the Miyabi Mikoto range, is distinguished by its striking diamond Damascus pattern and its hard-wearing micarta handle. Handcrafted in Seki, Japan, it pairs a hard fine-carbide steel core with a 101-layer blade, making it a strong choice for a cook who wants genuine performance and a knife built to be used day in, day out. At the heart of the range is a hard FC63 fine-carbide core, hardened to around 63 HRC and hand-honed with the traditional Honbazuke method for a keen, long-lasting edge. Around it sit 101 layers of steel, acid-etched into the diamond pattern that is unique to this collection, giving the blade a visual identity distinct from the flower Damascus seen elsewhere in the Miyabi range.
