KOTAI Bunka Knives
The KOTAI Bunka knife collection is built around one of the most recognisable Japanese blade profiles, combining everyday versatility with a distinctive reverse Tanto tip. “Bunka” means “culture” in Japanese, with the shape traditionally associated with preparing a wide variety of Japanese home cooking. Across the collection, the tall blade profile and angular K-tip make these knives well suited to slicing, chopping, trimming, and more controlled board work.
What defines the KOTAI Bunka range is the balance between precision and practicality. The reverse Tanto profile, also known as a K-tip, gives the knives a more accurate point than a classic rounded blade, making detailed cuts easier to place. Made from Japanese 440C high-carbon stainless steel and hardened to approximately 60±1 HRC, the blades are designed to take and hold a sharp edge while remaining tough, impact resistant, and practical to maintain. Finished with a Tsuchime hammered surface and octagonal ebony handles, the collection brings together sharpness, control, and a distinctive Japanese aesthetic.

Our Personal Opinion
Handling the KOTAI Bunka knives, the K-tip is the detail that gives the collection its character straight away. Across the range, the angular tip makes the front of the blade feel more precise than a standard rounded profile, which helps with trimming, controlled cuts, and more detailed prep. The shape still feels versatile enough for everyday chopping and slicing, but it has a sharper, more focused personality than a standard Santoku or chef knife.
In person, the Tsuchime finish adds texture without making the knives look overly busy. It gives the blades a practical, hand-worked feel, and on the board it helps with food release when working through ingredients that would normally cling to smoother steel. The hammered surface also contrasts nicely with the clean geometry of the K-tip, giving the collection a strong visual identity.
The ebony handles give the range a more premium, traditional feel in hand. Their octagonal shape makes grip placement feel natural, especially when using a pinch grip, and the hidden full tang construction gives the knives a reassuring sense of balance. On the board, the 440C steel feels sharp and dependable, with enough toughness to make the collection feel practical for regular use.
