Like the rest of the MAC line, the blades use the brand's high-carbon molybdenum stainless steel, hardened to around 59 to 60 HRC and ground to a keen 15 degree double bevel for clean, low-resistance slicing. Where the Professional series makes its own case is the build around that blade. At roughly 2.0 to 2.5 mm it sits a touch more substantial than MAC's thinnest Original range, and the added bolster gives it a balance and heft the bolster-free ranges don't have. Our Personal Take
The bolster is the whole story here, so it's where we'll start. Across the MAC line, the Original and Chef ranges keep things bare and light, but the Professional series adds a stainless bolster between blade and handle, and it genuinely changes the knife. It shifts weight back toward your hand, steadies the balance point, and gives the blade a more planted, deliberate feel through a cut. That is who we'd recommend this series to: a cook who loves MAC's keen sharpness but finds the lightest MAC knives a little too nimble, and wants a more substantial, professional-grade tool with a proper anchor for a pinch grip.
On steel and edge, the Professional series is pure MAC, and that is the point rather than a criticism. You get the same high-carbon molybdenum blade at around 60 HRC and the same fine 15 degree edge that runs across the range, so it takes a razor edge and comes back quickly on a whetstone. As with any thin, keenly-ground MAC blade, it is built for clean slicing rather than heavy chopping, so it is happiest with vegetables, meat and fish and best kept away from bone and frozen food.
