Our Personal Opinion

The bridge idea is the first thing we’d point to, because it’s not just branding. It shapes who this collection is for. Hashi is built for someone who wants real Seki-made knives without stepping straight into the upkeep that harder, high-carbon Japanese blades ask of you. That’s exactly who we’d recommend it to: a confident home cook who wants craft and sharpness, but wants a knife they can rinse, dry and get on with.

The HRC 57 rating is where we think the collection makes its smartest choice, and it’s worth being honest about the trade. At 57, the steel is softer than the 60-plus you’ll find on more specialist Japanese knives, so it won’t hold a keen edge quite as long. In return it’s tougher, more forgiving of everyday use, and genuinely easy to bring back sharp on a whetstone or pull-through. Paired with molybdenum stainless steel, it’s built to resist rust and shrug off the kind of treatment that would worry a high-carbon blade. For most kitchens, we’d call that the right compromise.

The pakkawood handles and full tang are what round the range out as an everyday workhorse. Pakkawood doesn’t have the natural grain and ageing character of a wood like ebony, but that’s rather the point: it’s stabilised to resist water and wear. The ergonomic shape is designed to sit securely in the hand, and the hidden full tang is built to carry the balance back toward the grip for control.
