Miyabi 6000MCT Knives
The Miyabi 6000MCT, also known as the Miyabi Artisan range, pairs one of Miyabi's finest powder steels with a beautiful hand-hammered finish. Handcrafted in Seki, Japan, it is the range to look at if you want the sharpness and edge retention of powder steel combined with a striking traditional Tsuchime blade. Like all Miyabi knives, each one is made to an exacting standard and backed by a lifetime warranty, and the result is a knife that is as pleasing to look at as it is to use.
What defines the 6000MCT is the combination of its steel and its hammered finish. The cutting core is MC63 micro-carbide powder steel, ice-hardened using Miyabi's CRYODUR process to around 63 HRC, which gives an exceptionally keen edge with excellent edge retention and corrosion resistance. That core is encased in two further layers of steel and finished with a hand-hammered Tsuchime surface, the small hollows helping food release from the blade as you cut. The edge is hand-honed on both sides using the traditional Honbazuke method to a razor-sharp 9.5 to 12 degrees per side, and the knives are completed with a specially shaped Cocobolo pakkawood handle in a comfortable D-shape, weighted for balance and fatigue-free cutting.
