The Miyabi 5000FCD, also known as the Miyabi Kaizen II range, brings the beauty of a Damascus blade and Miyabi's traditional craftsmanship to a more accessible point in the range. Handcrafted in Seki, Japan, it fuses elegant design, modern steel technology and centuries-old technique, and is a natural choice for a cook who wants a genuine Miyabi Damascus knife without stepping up to the powder-steel ranges. What defines the 5000FCD is its FC61 core and 48-layer Damascus construction. The blade is built around FC61, a fine-carbide stainless steel, double ice-hardened using Miyabi's FRIODUR process to around 61 HRC, which gives a keen edge, good edge retention and excellent corrosion resistance. That core is clad in 48 layers of stainless steel to create the range's striking flower Damascus pattern, darkened for extra depth, and the edge is hand-honed on both sides using the traditional Honbazuke method to a razor-sharp 9.5 to 12 degrees per side. The knives are completed with an elegant black pakkawood handle featuring a steel end cap with a red trim and a rounded bolster for comfort and balance.
