Kai Sekimagoroku Kinju & Hekiju Knives
The Kai Sekimagoroku Kinju and Hekiju collection is designed for precision-driven kitchen work, focusing on traditional Japanese blade forms and specialist cutting techniques. Handmade in Japan, this Professional Series range is built around Deba and Yanagiba profiles, developed specifically for preparing fish and meat with accuracy and control.
The collection is divided into two distinct groups. The Kinju series is designed for right-handed users and includes a broader selection of blade sizes, while the Hekiju series is tailored specifically for left-handed users, offering matching Deba and Yanagiba options. This clear separation ensures that each knife maintains the correct single-bevel geometry, which is essential for precise, clean cuts in professional preparation.
Constructed using 8A and SUS420J2 steels and hardened to approximately 56-58 HRC, the blades balance sharpness, durability, and ease of maintenance. Combined with a simple black handle in pakkawood or polypropylene, the overall design is minimal and functional, placing emphasis on performance and technique rather than decorative detail. The blades are also marked with traditional Japanese kanji spelling “Seki Magoroku,” adding a subtle visual reference to the collection’s heritage.

Our Personal Opinion
Handling the Kinju and Hekiju knives, the difference in intent compared to general-purpose ranges is clear straight away. The blades feel light and purposeful, with a shape that encourages controlled, deliberate movements rather than general chopping or rocking.
A small detail that we like and that stands out in person is the engraved kanji on the blade, spelling out “Seki Magoroku.” It’s subtle, but it reinforces the knife’s Japanese heritage and adds a layer of character that you don’t fully notice until you have the knife in hand.
