KOTAI Bunka Petty Knife 13.5cm
Just like the common Petty knife, the Bunka Petty has a medium-sized blade with a flat profile; however, their blade tips are shaped very differently.
Bunka means “culture” in Japanese. The name derives from its traditional use in making cultural cuisine in Japanese homes. Bunka knives are recognisable from their “reverse Tanto” profile, also called “K-tip”, which makes them more precise than a classic rounded blade.
440C steel from Aichi Steel is a high-carbon Japanese stainless steel: it is much less prone to rust than carbon steel. In addition, its heat treatment (also known as “tempering”) allows KOTAI knives to reach a hardness of HRC 60 ±1 without compromising toughness or impact resistance. The tsuchime hammered finish creates small air pockets that reduce food sticking to the blade, making cutting easier and cleaner. It also adds an aesthetic element to the knife.
The signature octagonal handle is made of rare ebony wood, a beautiful dark natural wood famous for its hardness and ability to age well.
