KOTAI Tsubame Utility Knife 15cm
The Utility Knife, also called "Petty" or "Shotoh" in Japan, is smaller than a Gyuto but larger than a paring knife. This intermediate size makes it a versatile all-purpose knife, perfectly suited for a variety of small kitchen tasks where a larger knife would be cumbersome.
Its pointed tip offers excellent precision, while its length makes it ideal for slicing fruits and vegetables, creating garnishes, or chopping herbs.
Besides its aesthetic appeal, the “Tsuchime” (hammered) pattern creates tiny pockets of air between the blade and the food being cut. This ancestral Japanese method reduces drag, thus preventing food from sticking to the blade.
Forged with Japanese 1K6 high-carbon stainless steel. 1K6 combines a high carbon content for hardness and edge retention with the optimal amount of chromium for corrosion resistance. With full-tang construction, KOTAI Tsubame blades extend all the way to the bottom of the handle - for superior durability and balance.
