Tamahagane San Knives

The Tamahagane San collection is the core range from Tamahagane, made at the Kataoka factory in Niigata, Japan, and built around a three-layer VG-5 blade. The name carries real weight: tamahagane is the word for the pure, high-quality steel traditionally smelted for Japanese swordmaking, and while these knives use modern stainless steel rather than that historic material, the name signals the standard the brand sets itself. Across the range, San knives pair a hard, keen cutting core with a more forgiving outer cladding and a weighted, balanced handle, aimed at cooks who want genuine high-performance Japanese steel in a practical, everyday knife.

What defines the San range is its three-ply construction. The middle layer, which forms the cutting edge, is VG-5, an exceptionally hard steel taken to around 61 HRC. Tamahagane rate VG-5 as being as hard as the better-known VG-10 while offering superior edge retention, which is a strong claim and the heart of the range's appeal. Sandwiching that core are two outer layers of softer, more stain-resistant SUS-410 stainless steel, which protect the hard edge and add toughness, the same san-mai logic used across the best Japanese knives: a hard core for sharpness, softer cladding for resilience. The knives are finished with laminated brown pakkawood handles that contain internal weights, tuned so each knife sits balanced in the hand.
