Keeping a Japanese knife sharp is a skill worth learning, and the whetstone is the tool that does it properly. A Japanese blade is harder and more keenly ground than a typical Western knife, which is what makes it cut so well, and it means it deserves, and repays, sharpening it on a stone. Known in Japan as toishi, the water stone is the traditional method for putting an edge on a blade, and done right it restores an edge to better than factory sharpness while removing only the tiny amount of metal needed, so a good knife lasts for decades. Our range covers everything you need to keep an edge, from coarse repair stones to fine finishing stones, alongside honing steels and complete sharpening systems, from makers including KAI, Kasumi and KOTAI.

Japanese water stones differ from the oil stones common in the West. They are used with water rather than oil, cut faster, and come in a far wider range of grits, which is what allows the multi-stage sharpening that Japanese knives reward. The process moves through the grits in sequence: a coarse stone to repair or set the edge, a medium stone to sharpen, and a fine stone to refine and polish. You do not always need every stage, and understanding the progression is the key to choosing the right stones for your knives.

Understanding Whetstone Grits

Grit is the number that matters most when choosing a whetstone. The higher the number, the finer the stone, and each range does a different job.

Coarse, around 200 to 600 grit. For repairing chips and reshaping a badly dull edge. Used rarely, but nothing else will fix real damage. Our range includes 400 grit stones and the coarse side of combination stones such as the 300/1000 and 400/1000.

Medium, around 800 to 2000 grit. The core sharpening range and where most of the work happens. If you buy a single stone, a medium one around 1000 grit is the classic choice. We stock 800, 1000, 1200 and 2000 grit options.

Fine, around 3000 to 8000 grit. For refining and polishing an already-sharp edge, taking it to the keen, mirror-like finish a hard Japanese blade is capable of. This stage is where these knives really distinguish themselves. Our range runs up to 6000 and 8000 grit.

Combination stones. Two grits on one block, typically a coarse and medium or a medium and fine. For most cooks a combination stone such as a 1000/4000 is the most practical single purchase, covering both sharpening and refining in one tool.
