Kasumi Knives
Kasumi is one of the most recognisable names in Japanese Damascus knives, made by Sumikama Cutlery in Seki, Japan's historic knife capital. The brand takes its name from the Japanese word kasumi, the mist or haze that settles over the Seki mountains, which is echoed in the rippling, layered pattern of its Damascus blades. Sumikama was the first major Japanese maker to fold Damascus steel around a VG-10 core, a technique since copied by many others, and Kasumi knives remain known for keen edges, striking looks and dependable everyday performance.
Every Kasumi knife is built around the same high-performance heart: a VG-10 stainless steel cutting core, hardened to around 60 HRC and ground to a keen 15 degree edge. What changes between the ranges is the finish and the handle. The Damascus series wraps that core in 32 folded layers for the signature misty pattern and pairs it with a natural pakkawood handle, while the HM (hammered) series gives the blade a hammered surface that helps food release, with a smooth POM resin handle.
