Bread Knives
A bread knife is the one knife in the kitchen that works by design rather than by pure sharpness. Where every other blade parts food by pushing a keen edge through it, a serrated bread knife saws, its teeth biting through a hard crust while the recesses between them protect a soft interior from being crushed. That is why a bread knife slices a crusty sourdough or a soft milk loaf without tearing either, and why no straight-edged knife can do the same job. What separates a good bread knife from an ordinary one is the serration pattern and the steel behind it. Japanese bread knives are known for well-cut, precise serrations and high-quality steel that holds its bite longer, and some, such as the KAI Shun ranges, use a distinctive scalloped edge designed to glide through crust with very little pressure. Length matters too: our knives run from 20 cm up to 27 cm, and a longer blade lets you slice across a wide loaf in one clean stroke rather than sawing back and forth. Beyond the blade, the choice comes down to tier, from practical workhorses to Damascus-clad premium knives, all of which cut well and differ mainly in materials, finish and feel in the hand.
